Amaranth - Red Garnet

With its’ striking color, Red Amaranth, makes a beautiful garnish to any dish. With a mildly sweet, but earthy beet flavor this bright microgreen is often used in sandwiches, salads, wraps, any other cold applications as its’ leaves will wilt when left exposed to sun or high heat for long amounts of time. Red amaranth is known to lower cholesterol, reduce cardiovascular disease, reduce the risk of osteoporosis and other calcium deficiencies, fights cancer, digests easily, helps improve eyesight, helps with hair loss and greying. Often used as an appetite suppressant, this colorful green aids in weight loss routines and maintaining a healthy weight. Arugula

This favorite is considered a staple of the spicier side of microgreens, with a strong peppery, slightly buttery and cabbage like flavor. Arugula microgreens are perfect in sandwiches, salads, smoothies or used on top as a colorful garnish. These microgreens are used to keep bones healthy and strong, help fend off environmental toxins, prevent heart disease, repair cells, and help reduce the risk of colon cancer. Arugula microgreens contain the same amount of calcium as found in spinach. Phytochemicals in this miniature green help the liver produce glutathione, a cell detoxifying antioxidant. Arugula is best used in cold/raw preparations to avoid wilting the leaves with high heat preparations.

Broccoli - Waltham 29

With rich dark green color, tangy, mildly peppery, fine broccoli flavor this microgreen is often used on sandwiches, salads, smoothies, and pasta dishes. This smaller version of fitness food also makes a beautiful garnish to pretty much any soup. These greens are also great added to a tofu scramble or any other cooked grain dishes. This powerful green contains up to 40 times the amount of minerals and vitamins than their mature counterpart, while containing larger quantities of magnesium, manganese, copper and zinc (the essential minerals most people are deficient in). Broccoli contains the highest amount of sulforaphane available compared to almost any other food available. Broccoli microgreens are super nutritious, contain cancer fighting agents, fight inflammation, improve heart health, improve digestion, are high in antioxidants, which are essential for stimulating the metabolism. Often mistaken for wheat, but actually a fruit seed similar to Rhubarb or Sorrel, this Gluten-Free and nutrient packed green is both rich and flavorful. Buckwheat can help to boost the Immune system, aids in slowing down the glucose absorption rate, improves and promotes bone and teeth health, lowers cholesterol levels, and also contains all 8 amino acids which help with collagen production to preserve the skin and its elasticity.
This folic acid packed green contains Rutin, a powerful antioxidant, heavily responsible for Buckwheat’s amazing health benefits, including its ability to fight leg adema, varicose veins, poor circulation, and atherosclerosis (the hardening of arteries).
